Description
The newly opened The Exhibit Modern Grill & Bar, a beautifully elegant and intimate restaurant setting that offers a dining experience solely focusing on artisanal ingredients where provenance will never be compromised. The cuisine is generous, lively and colorful, with menus specially curated to take the products in its purest form, then transforming it to reveal its best qualities through evolving nuances and flavor combinations.

Located on the second floor of The St. Regis Shanghai Jingan, The Exhibit Modern Grill & Bar is aesthetically elegant and simple, enhanced with bold tones of grass green hues, and beautiful art deco marble flooring. The island seafood ice bar station displays fresh seasonal seafood displays and is a visual attraction of the restaurant.

The Exhibit Modern Grill & Bar offers a short but versatile degustation menu, but never shying away from tailiring additional option to your liking, using some of the freshest ingredients from the farmer’s market. The 5-course, 8-course and 12-course degustations are available whereby specific dishes are changing frequently. The restaurant will offer a wide variety of open wines in order to select the right pairing for your personal preferrence. For the more curious, any champagne bottle ordered at the restaurant will be opened in good-old Napoloen‘s fashion, by a saber, following one of St. Regis longest standing and exclusive traditions.

Chef Cesar A. Perez de Anda is a true explorer having studied the culinary art through his many years of traveling the globe. He was first introduced to the culinary world at the age of 18, while studying at university. His love and passion for cooking continued to grow, and has taken him to many parts of the world, as well as some of the most demanding kitchens, such as 2 Michelin star restaurant Noma in Copenhagen and ASKA in New York. Prior to joining The St. Regis Shanghai Jingan as the Chef de Cuisine for The Exhibit Modern Grill & Bar, Cesar worked at El Efante restaurant in Shanghai.

Cesar A. Perez de Anda is constantly sourcing quality and interesting ingredients, and researching the best techniques to apply them in order to create thoughtful and interesting dishes that are unique and exciting to individual tastebuds. Balance, timing, seasoning, layering, richness, acidity, texture, temperature, are just a few of the elements that are used to develop the dishes.

    It was a wonderful dining experience. From the professional and friendly staff to the amazing food on the table, we had an enjoyable evening.
    The beef carpaccio was delicious although a little overpowered by the tuna/anchovy emulsion. I would have like less of the sauce.
    Second course of foie gras could be my favourite of the meal. The buttery goodness was balanced with the slightly tart peach. The thin pear crisp gave another texture to the dish.
    The main of beef brisket was so flavourful and tender. Root vegetables are not on my list of favourite things, but on this plate I had to admit that they do pair so perfectly with the deep rich flavour of the meat. A small cut of meat with some of the purée and onion made each mouthful so delicious and perfect.
    Dessert of chocolate ganache was just an art piece to admire when it was served. After the first spoon, it was hard to stop.
    It was obvious the Chef has thought a great deal about the balance of flavours and textures on the plate. Every dish demonstrates those traits.

    餐厅周的第一餐,选择了瑞吉酒店的Bespoke。瑞吉酒店的装修耦合了富丽堂皇的古典气派与新颖别致的现代风韵,让人在感叹华贵的同时不觉沉闷。

    特色餐厅Bespoke位于酒店二层。与整栋建筑的华贵不同,餐厅的入口相当低调,只有一个LED屏幕。窄窄的通道口前端摆放着餐厅的荣誉铭牌。一旦走出小巷,便豁然开朗。厅堂宽敞,冰山上的各种海鲜缤纷多彩。

    服务员训练有素,一开始首先询问要喝什么水,然后介绍菜单。看得出服务员对于菜品和酒水都非常了解。

    #餐前面包# 很有嚼劲和韧性。

    #意大利牛肉薄片# 生牛肉薄片是本人非常喜欢的一道意大利菜。这一款在延续经典的基础上进行了创新,用金枪鱼和凤尾鱼打成的泡沫慕斯做酱汁,在维持creamy的基础上,增添了海洋的微咸风味,很开胃。

    #香煎鹅肝# 鹅肝作为法餐中的重头戏一直备受推崇。由于鹅肝的肥腻,通常会搭配有酒味或者酸性的配菜。这里用的是水晶梨。不得不说清爽酸甜的水果一定程度上平衡了鹅肝的厚重。不过对于本人来说,这一道还是偏油了些许。

    #比目鱼# 主菜选了我喜欢的比目鱼。果然不负所望。比目鱼外皮焦脆,鱼肉嫩滑,厨师火候把握得相当好。略略炸过的京葱特别香脆,土豆泡沫搭配葡萄味酱汁非常温润。好评。

    #拿破仑# 层层叠叠的酥皮搭配绵软的芝士,给人幸福满足。

    搭配一杯智利的白葡萄酒,微甜,回味。

    趁着换了年度菜单来吃的,据说是拿一年以来广受好评的菜组成了一个菜单,来尝试之后果然不愧是年度菜单,每一样菜从摆盘到口味都是无可挑剔,非常期待明年这家餐厅会有一个什么样的菜单。据说brunch也开了,抽个时间来打个卡

    哇!餐厅的圣诞节装饰好漂亮!平安夜和朋友去Bespoke餐厅吃了一顿圣诞大餐,超级开心。摆盘真的是很用心了,特别漂亮,关键是口味也很不错啊。肯定还会回来二刷的!推荐!!!
