    Panos the steakhouse. Before writing this review, I did a bit of research. Panos is the diminutive for Panagiotis, a Christian name. I saw on Shenzhen Daily last week that Panagiotis Kalamidas from Greece was happy with the reopening of the restaurant, after the lockdown in Shenzhen. I was happy too, sînce it was on my list for the Restaurant Week. Set lunch at 338rmb with starter and dessert, what better way to try a steak at Panos when price range can go from 600rmb to 1,300rmb. The steak in my menu was Ribeye M3. Finally time to do some research on what all those M3, M5, etc mean. Understood that it is a Marble Score, and that a Marble Score of 3-4 is your go-to as it never lets you down. Crispy salty crust, tender juicy middle, this is what I got. Maybe I will be able to recognize a Marble score with eyes now. Panos is specialized in dry aged and wet aged steaks. Same, I understand a bit more now on the process, the impact on tenderness, flavour. It seems by reading I wish to be a steak expert more than a wine expert. And same as for wine, a good steak can be very pricey, and Panos is pricey. The experience was very comparable with Morton’s. You have a big ball of bread to start the meal, with different butters, including a garlic butter which was a bit strong. The tomato parmesan cheese bisque was perfect, tasty, perfumed. Your piece of meat is presented to you before being cooked. And then it comes back to you, with 3 different mustards/sauces. And you start enjoying every bite, one with nothing, one with sea salt, one with whole grain mustard, one with horseradish mayonnaise… I can still feel the truffle of the truffle fries 4 hours after my meal. Tiramisu was not available and replaced by cheesecake, which was good. Service was nice, friendly and attentive. They even offered me one glass of French Wine, as the steak would taste better pairing with wine. Compared to Morton’s, I liked the bit darker and more intimate side in Morton’s. You can probably have this feeling at Panos in the evening. All in all a good experience, and despite my desire to repeat the experience and to dig further in different qualities of meats / different flavours, I would still find it painful to pay 1,000 rmb for a steak.
